Ingredients:
1 pre-made but, not pre-cooked pizza dough $1.50
1 container of pesto $4.00
1 container of mozzarella (packed in water) $3.50 ($2.25 on sale)
You will need a cookie sheet and an oven to make this recipe. I buy the premade dough and Buitoni pesto sauce at Winco (in the refrigerated section, next to the cheese). Often the mozzarella (packed in water) will go on sale when it is getting close to it’s expiration date. It can be found at Winco, in the gourmet cheese section. I recommend that you do not use regular mozzarella, or a pre-made pizza crust because the pizza won’t taste as scrumptious!
Preheat oven to 400 degrees, or as specified on the package of pizza dough. Spray cooking sheet with cooking spray and press dough onto sheet, reaching all corners to create pizza crust. Spoon pesto over pizza crust, as you would tomato sauce. Break off pieces of the mozzarella, and place over the pesto. Bake according to dough specifications.
Tip: If there is any leftover pesto, it can be used on pasta for a two ingredient meal. Or try toasted cheese sandwiches with a kick, by spreading pesto on the bread before toasting!
