This recipe is for the college student that would like a change from the usual pizza-in-a-box, and would like to try something new. I tried this pizza while in Italy and it rocks! It has 4 ingredients and it won’t break the bank at around $6 (prices may vary). I purchase all my ingredients from Winco, or you can check with your local supermarket.
You will need:
1 pre-made but, not pre-cooked pizza dough $1.50
1 bunch of basil leaves $.50
1 can whole tomatoes $1.00
1 container of mozzarella (packed in water) $3.50 On sale: $2.25
I buy the premade dough at Winco (in the refrigerated section, next to the cheese). Do not use a pre-cooked pizza crust because it won’t taste the same. You will need a pot, cookie sheet and an oven to make this recipe. Often the mozzarella (packed in water) will go on sale when it is getting close to it’s expiration date. It can be found at Winco, in the gourmet cheese section. Do not use regular mozzarella; it doesn’t taste the same.
Preheat oven as specified on the package of pizza dough. Spray cooking sheet with cooking spray and press dough onto sheet, reaching all corners to create pizza crust. In a pot, smash whole tomatoes and season with salt and pepper. Cook over med-high heat for few minutes, until juice reduces; about 5 minutes. This is not a traditional tomato sauce; tomatoes will be partially intact. Spoon tomatoes over pizza crust. Break off basil leaves and place them on top of the sauce. Break off pieces of the mozzarella, and place beside basil leaves. Bake according to dough specifications.
